Don't automatically assume that all of the tabulated individuals are offspring of the head of household. It is extremely common for families to have one or more unrelated individuals living with them as boarders, domestic servants, and farm laborers or to have multiple generations living under the same roof. In the areas of NY state that I've researched in 1850 and later census, almost half of the households had others living with them, especially in rural farming communities. Have you located any wills? That's the most likely place to find previously unknown children or siblings.
